Hello everyone! I am Rachael. I have always been the meal prepper in our home. I took pride in crafting what I thought were nutritious meals for my family, until life had other plans.
Our world shifted quickly when my son was diagnosed with IgA Nephropathy, a rare kidney disease that has no cure. There is no way to stop it's progression. Only manage it. The best way to do so is through medication and a strict low sodium diet. This diagnosis changed me as a cook, as a Mother and as a person. It ignited a passion in me to not only prepare kidney friendly meals for my family but learn everything I possibly could to keep my son's kidney's safe.
Now my kitchen has been transformed into a haven for creating flavorful, fun and family and kidney friendly meals. I am on my own personal mission to prove that low-sodium doesn't have to be difficult, flavorless or boring.
LowSodiMom was born!
This blog is about my journey. The things I have learned as well as the wonderful recipes I have created. My goal is to help my son not only live a long, safe, healthy and normal life but enjoy it too!
Incurable disease doesn't have to suck. And I am here to prove it!
